Spinach Corn Quiche


After a very loooooooooooooong time, here is a post on a delicious italian/french dish, Spinach Corn Quiche.

Quiche is a favorite dish for many and for those unaware of it, Quiche is a savory, open-faced pastry crust with a filling of savory custard with cheese, seafood/Meat and/or vegetables…The choice is yours. Quiche can be served hot or cold. It is part of french cuisine but is also popular in other countries, particularly as party food.
Here i have made Quiche with Corn and Spinach but there are many tasty things that you can add to this dish depending on the contents of your fridge. For a very healthy option, you can prepare the crust using wheat flour instead of plain flour. Your kids would enjoy being a part of this making and would enjoy press the crust batter on the pie/tart plate.

Spinach – 200 gms, finely chopped
Corn – 1/4 cup, sliced
Cheese – 1/2 cup, shredded
Eggs – 2, small
Milk – 1/2 cup
Salt – 1/4 tsp
Mustard Paste – 1/4 tsp
Butter – 1 tsp, melted
Onions – 1/4 cup, finely chopped

For the Pie Shell:
Plain flour – 1 1/4 cups
Butter – 1/2 cup, unsalted, cubed
Salt – 1/2 tsp
Sugar – 1/2 tsp
Cold Water – 4 to 5 tblsp

Mix the maida, salt and sugar in a bowl.Knead well.Add butter and slowly add cold water.
Knead well till dough is thick.Transfer to a floured surface and knead gently. Roll the dough into a small-medium circle.




Place it on top of a pie plate and gently press so that it lines firmly on the sides and bottom.Trim the edges and bake in a preheated oven at 180C till golden brown.Remove and cool.
Heat butter in a small pan.Add onions,and spinach.Saute well for 2 to 3 minutes.Add corn. Remove and spoon this into the pie.Beat eggs, milk and salt in a bowl.Sprinkle cheese over the spinach mixture and pour the beaten eggs on top.Bake in a preheated oven at 400F/180C for 35 to 45 minutes or until the center is set.Cut into slices and serve or fill in small individual pie bowls and eat straight.
